It’s been a stressful week at work, and I am so happy it’s the weekend (even though I have to work tomorrow). Tomorrow is my very good friend‘s golden birthday (26 on the 26th!), and we’re having a potluck at ITap. International Tap House only serves beer. That’s it. No food, no liquor, and no non-alcohol beverages. Should be challenging to not drink tomorrow. Anyway, they’re cool with people bringing in food, since they don’t sell it, so we’re having a potluck.
I volunteered to bring cupcakes. I was originally going to do yellow cake with chocolate icing, but then I decided that chocolate cupcakes with peanut butter icing would be amazing. I realize others have already thought of this, but I’d never really put this combination together.
Since I’m working all day tomorrow, I decided to make the cupcakes and icing tonight and frost them tomorrow. This was my first time ever making icing and I was slightly nervous. I found this recipe online but followed the modifications found in the first comment.
This super healthy recipe calls for 1 cup peanut butter (the recipe recommends a brand name), 1 stick of butter, 2 cups confectioners (powered) sugar, and 2 tbsp of cream. I wasn’t sure what this meant, so I went with whipping cream. I have no idea what to do with the rest that carton.
I mixed the butter and the PB (both at room temperature) with my hand mixer and then slowly added in the sugar. The cream was kind of an after-thought but it does make it less sticky.
It looks like sweet potatoes here but it’s not that orange in person. The chocolate cupcakes were just a box mix – nothing special there. If I’m feeling fancy tomorrow I may get some mini Reese’s cups to put on top, but that might be too sweet. Overall, I’d say my first attempt at icing was a success! Can’t wait to try them tomorrow!
